Low temperature drying (NTT drying) in the food area

During the processing of food, water is released to the room air in the form of water vapor by the product, as well as by the personnel. In addition, moisture is also introduced into the room via the fresh air. When this humidity has reached a certain value, condensation is formed on the cold surfaces of the product and / or on the walls and ceilings of the production rooms. This is not desirable. To avoid this, the dew point of the room air must be below the temperature of the product, or below the temperature of the walls and ceilings of the production rooms. This is achieved by air dehumidification.

Air dehumidification is achieved by condensation. For this purpose, the air of the production rooms is cooled by means of the circulating air process to temperatures which are significantly below the room temperature. As a result, the moisture in the form of condensate is separated from the cold heat exchangers. The air is then heated again to the room temperature and blown into the room. There, the air can absorb moisture again.

In order to reach the low dew point temperatures, the air must be cooled to -10 ° C. As a result, the condensate immediately freezes and precipitates in the form of ice on the cold heat exchangers. As a result, the heat exchanger slowly builds up with ice until air no longer flows through it. To avoid this, the heat exchanger must be defrosted (defrosted) at regular intervals. For this purpose, the pipes of the heat exchangers are passed through with hot gas or with warm brine. For this defrosting process to take place very quickly, the heat exchanger is designed as a drop tube heat exchanger. The defrosted ice can drain at the downpipe!
